I don't know about your family, but those of us at the Little Shack LOVE pancakes! We have them a few times a week, sometimes more often! This recipe makes whipping up a batch really easy and quick. I have been using it for years and just love it. Not only are they easy, but you save money not buying ready made mixes.
Pancake Mix
12 cups all purpose flour ( you can use a mix of all purpose and whole wheat or other flour)
2 tablespoons salt
3/4 cup sugar
3/4 cup baking powder
4 cups powdered milk ( I have made it without the powdered milk and used milk as the liquid instead of water)
Combine dry ingredients in a large bowl (or 4L ice cream pail).
Store in a sealed container in the cupboard until ready to use.
To Use
Combine in a bowl:
1 cup water ( or milk if you opted to not use powdered milk in the dry mix)
1 egg
2 tablespoons oil or melted fat
1 /12 cups of mix
Preheat your frying pan. Ladle mixture into hot, oiled frying pan and turn when bubbles appear on top.
Serves 3-4 ( or 2 very hungry people).
I have also used this recipe for waffles. Just mix it up and cook it in your waffle iron as you would normally.

My kids are getting old enough to be trusted at the stove--and they LOVE a hot breakfast. But, I am NOT a fan of store-bought pancake mix. It's all from scratch around here. This looks like a great way to give them a hot-breakfast option, without me always having to be the chef! Thanks! Pinning!
ReplyDeleteHi Kelly! I'm glad you stopped by. This recipe converted my son in law who believed you had to use Bisquick for the best results. He is the chief pancake flipper in my oldest daughter's house. He now uses this recipe exclusively! Hope your kids enjoy it too!
